All new gmail appear in inbox as read, not bolded to indicate unread.
What setting causes this to occur?

Two possible reasons I can think of:
1) Are the messages already read on the server? ie. is there another email client running or is there a server-side rule?
2) Is there a rule in POP Peeper marking the message as read? Right-click on the message and select AntiJunk -> Show evaluation to see what filters/rules were applied. You can also use AntiJunk -> Test message to see what actions would occur
