If there are several email accounts, is there a way to set up one as the default email account to send email from when selecting "compose"?

The settings for this are included in the "Compose" interface prompt.

Addendum: It occurs to me that because you are asking this question you are probably not getting the following PP interface prompt when requesting to "Compose" a message: If this is the case (that is you do not see this PP Prompt when you "Compose" a message then you may have clicked on the "Do not show this prompt again" included in this interface in which case you will need to go to "Tools" > "Options" > "General" and check the "Reset confirmation prompts" (at the bottom) and then click the "OK" button to get this "Compose" prompt back again (and any other prompts for which you may have done the same).
