Can an specific email/gmail address be set as default so compose shows that primary address sender?

If what you mean is the setting of the Sending account in the Compose Window as illustrated below in the 1st screen-shot: There is a default prompt that "normally" displays each time you use the Compose window as illustrated in the 2nd screen-shot below (unless you have checked the box to "Do not show this prompt again" referenced by pointer 2): which has an "Account to use for composing" drop-down list located at the top-left that can be used to select the sending account which can also be set as the "default" sending account for all sent messages by checking the "Use this account by default when composing new mail" check-box as referenced by pointer 1.

Note: if you do not get the "POP Peeper Select Account" default prompt when opening the Compose window (as illustrated in the 2nd screen-shot) then you may have checked the box to "Do not show this prompt again" (pointer 2) -- if you would like to have this default prompt return to the Compose window you can reset this prompt to display again by going to "Tools">"Options" in the main PP interface and checking the "Reset confirmation prompts" box and then clicking on the "OK" button to reset the missing prompt so that it will display once again. If this is not your question then please clarify what it is that you are asking about in more detail.
