You cannot -- the color represented in the tray icon will match the color of the account. Maybe a compromise in the color would help? e.g. rgb 96/0/0 to have a dark shade of red.

The method that PP uses doesn't rely on Windows Dark Theme. You may want to double-check that it's set to the theme you thought:
PP main menu: Tools / Theme Viewer
Double-click "Dark theme" and see if that changes it

Are you sure you were using v5.6? I just went though the process of creating a gmail account in v5.6 and at no time did it suggest that Oauth2 was available.

I had tested Gmail/Oauth2 on 2 instances before my first response, but your error is indicative of something happening; perhaps 3rd party.
